Ingredients

The base

  • 4 tablespoons butter
  • 1 medium onion (diced)
  • 2 slices bacon (or prosciutto, or ham, minced)
  • 4 cloves garlic
  • 5 tablespoons whole-wheat flour
  • 5 cups low-sodium chicken broth
  • 1 28-oz can peeled tomatoes (with liquid)

The seasoning

  • 3 sprigs parsley
  • 3 sprigs thyme
  • 1 leaf bay leaf
  • 1 cup heavy cream
  • 1 teaspoon salt
  • to taste pepper

Instructions

  1. Heat the butter in a large soup pot over medium-high heat.
  2. Add the diced onion and cook until soft.
  3. Add the bacon and garlic, stirring until the meat is crisp.
  4. Stir in the flour and cook for a few minutes.
  5. Pour in the broth and tomatoes, bringing to a boil while whisking.
  6. Add the herbs and simmer on low heat for 30 minutes.
  7. Remove the herbs and puree the soup until smooth.
  8. Stir in the heavy cream and season with salt and pepper.
  9. Serve warm.
