Ingredients

The base

  • 1 tbsp oil
  • 1-3 cloves garlic, minced
  • 2 pieces bell peppers, chopped
  • 1 piece sweet onion, chopped
  • 3 pieces carrots, chopped

The spices

  • 1 tbsp cumin
  • 3 tbsp chili powder
  • 1 pinch sea salt
  • 1 pinch cayenne
  • 2 tsp oregano
  • 1 tbsp unsweetened cocoa powder

The beans and vegetables

  • 1 can black beans, rinsed
  • 1 can white kidney beans, rinsed
  • 1 can red kidney beans, rinsed
  • 1 can diced tomatoes with juice
  • 1 can organic mushrooms, drained

The secret ingredient

  • 2 tbsp chia seeds
  • 1 piece lime, juiced (optional)

Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add garlic, bell peppers, onion, and carrots; sauté until soft, about 5 minutes.
  3. Add the remaining ingredients to the pot.
  4. Cover and cook on low to medium heat for 30-40 minutes.
