Instructions
- Heat olive oil in a large pot over medium-high heat and sauté onion, celery, and bell pepper until softened.
- Add garlic, chili powder, cumin, oregano, and smoked paprika; stir until fragrant.
- Add sweet potato, salt, beans, diced tomatoes with juices, bay leaf, and water; stir well.
- Bring to a boil, then reduce heat, cover, and simmer until sweet potatoes are tender.
- Remove lid and continue to simmer, stirring occasionally, until chili thickens.
- Remove bay leaf, adjust salt to taste, and stir in fresh cilantro.
- Serve warm with desired toppings.
