Ingredients

The base

  • 1 tablespoon extra-virgin olive oil
  • 1 medium yellow onion, chopped
  • 2 ribs celery, chopped
  • 1 medium red bell pepper, seeded and chopped
  • 4 cloves garlic, minced
  • 1 large sweet potato, peeled and cut into ½-inch pieces

The spices

  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 2 teaspoons fine sea salt, plus more to taste

The main ingredients

  • 3 cans (15 oz) beans (kidney, black beans, or pinto beans)
  • 1 can (28 oz) diced tomatoes, with juices
  • 1 leaf bay leaf
  • 1 cup water
  • ¼ cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a large pot over medium-high heat and sauté onion, celery, and bell pepper until softened.
  2. Add garlic, chili powder, cumin, oregano, and smoked paprika; stir until fragrant.
  3. Add sweet potato, salt, beans, diced tomatoes with juices, bay leaf, and water; stir well.
  4. Bring to a boil, then reduce heat, cover, and simmer until sweet potatoes are tender.
  5. Remove lid and continue to simmer, stirring occasionally, until chili thickens.
  6. Remove bay leaf, adjust salt to taste, and stir in fresh cilantro.
  7. Serve warm with desired toppings.
