cooked beans of choice, drained and rinsed (15 ounce cans)

Instructions
- Sauté the onion and garlic in oil or broth until the onion is soft, about 5 minutes.
- Add the carrots, red pepper, corn, jalapeno (if using), chili powder, oregano, cumin, and salt. Sauté for about 5 more minutes until the carrots begin to soften.
- Add the chiles, tomatoes, broth, and beans. Simmer uncovered for 20-25 minutes.
- Serve with toppings of choice.
