Black Bean and Feta Stuffed Phyllo Triangles

Instructions
- Thaw the phyllo dough in the fridge the night before.
- Heat olive oil in a large pot and sauté onions and garlic until fragrant.
- Add refried beans and spices, cooking for 5 minutes.
- Transfer the mixture to a bowl and let it cool slightly before mixing in green onion, jalapeno, and feta.
- Preheat the oven to 400°F and prepare baking sheets with parchment paper.
- Melt the butter and keep it ready for brushing on the phyllo.
- Layer 4 sheets of phyllo, brushing melted butter between each layer.
- Cut the layered phyllo into 4 long strips.
- Place 2-3 tbsp of the filling on one end of a strip and roll to form a triangle, alternating folds.
- Arrange on the baking tray, brush with melted butter, and bake for 16-18 minutes until golden brown.
- Serve with salsa Verde, sour cream, and lime.
