Tiropita (Greek Cheese Pies)

Instructions
- Thaw the phyllo dough in the fridge the night before.
- Heat 2 tbsp of butter in a large pot and sauté the diced onion until softened.
- Combine the sautéed onions with crumbled feta, shredded graviera, egg, cream, salt, and pepper in a bowl.
- Preheat the oven to 375°F and prepare baking sheets with parchment paper.
- Melt ½ cup of butter and set aside for brushing the phyllo.
- Keep the phyllo dough moist by covering it with a damp cloth.
- Lay out one sheet of phyllo on a flat surface and brush it with melted butter.
- Cut the phyllo into 4 long strips using a pizza cutter or knife.
- Place a heaping tablespoon of filling on one strip, 1-2 cm from the edge.
- Roll the phyllo over the filling to cover it completely.
- Fold the phyllo into a triangle shape, alternating sides as you fold down the strip.
- Arrange the triangles on the baking tray and brush with melted butter or olive oil, topping with sesame seeds.
- Repeat until all filling is used.
- Bake for 20-25 minutes until golden brown and crisp.
- Serve with a drizzle of honey and sprinkle of chili flakes if desired.
