Instructions
- Preheat the oven to 400°F and roast the garlic wrapped in foil with olive oil for about 40 minutes.
- Prepare the puff pastry by rolling it out and placing it on a parchment-lined baking sheet, then bake until puffy and lightly browned for about 20 minutes.
- Sauté garlic in olive oil, then add mushrooms and cook until browned, deglazing with white wine and seasoning with salt and pepper.
- Blend roasted garlic, cashews, milk, and lemon juice until smooth, then mix in herbs and season to taste.
- Spread the herbed cashew cheese over the cooled puff pastry, top with sautéed mushrooms, cut into squares, and serve.
