Ingredients

Herbed Cashew Cheese

  • 1 bulb garlic
  • 2-3 tablespoons olive oil
  • 1 cup raw cashews
  • ¼ cup unflavored soy or almond milk
  • 1 tablespoon lemon juice
  • ¼ cup fresh parsley
  • 2 tablespoons fresh chives
  • 1 tablespoon fresh thyme leaves
  • to taste salt and pepper

Puff Pastry Tart

  • 1 sheet vegan puff pastry

Mushrooms

  • ¼ cup olive oil
  • 2 cloves garlic
  • 8 ounces mixed mushrooms
  • ¼ cup dry white wine
  • to taste salt and pepper

Instructions

  1. Preheat the oven to 400°F and roast the garlic wrapped in foil with olive oil for about 40 minutes.
  2. Prepare the puff pastry by rolling it out and placing it on a parchment-lined baking sheet, then bake until puffy and lightly browned for about 20 minutes.
  3. Sauté garlic in olive oil, then add mushrooms and cook until browned, deglazing with white wine and seasoning with salt and pepper.
  4. Blend roasted garlic, cashews, milk, and lemon juice until smooth, then mix in herbs and season to taste.
  5. Spread the herbed cashew cheese over the cooled puff pastry, top with sautéed mushrooms, cut into squares, and serve.
