Creamy Mushroom Pastry Bites

Ingredients

The filling

  • 1 cup unsalted vegan butter plus 4 tablespoons, melted
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, finely chopped or pressed
  • 1.5 pounds assorted mushrooms, around 8 cups (cremini or button)
  • 2 tablespoons nutritional yeast (optional)
  • to taste salt and freshly ground pepper
  • 2 teaspoons finely chopped thyme
  • 3 tablespoons honey
  • ½ cup vegan feta or regular feta

The pastry

  • 1 package phyllo dough, thawed

Instructions

  1. 1. Heat a skillet on medium-high heat and melt the butter.
  2. 2. Add the chopped onion and cook until translucent.
  3. 3. Stir in the garlic and mushrooms, seasoning with nutritional yeast, salt, and pepper, and cook until mushrooms are tender and moisture evaporates.
  4. 4. Stir in thyme and honey, cooking for 2 minutes until well combined.
  5. 5. Transfer the mixture to a food processor with feta cheese and pulse briefly.
  6. 6. Prepare the phyllo by brushing melted butter on each sheet and stacking them.
  7. 7. Cut the phyllo and scoop the mushroom filling onto the ends, folding to create bites.
  8. 8. Freeze the bites for 30 minutes before baking.
  9. 9. Preheat the oven to 400°F and bake the bites for 20-25 minutes until golden brown.
