Vegan Crispy Mushroom Filo Pastry Bites

vegan filo pastry, thawed

vegan butter, melted
The filling

olive oil

mixed mushrooms, roughly chopped

fresh green onions, finely chopped

sweet white onion, finely chopped

garlic, finely chopped

thyme

nutritional yeast
Instructions
- Cook the ingredients for the mushroom filling in a saucepan over medium heat until the mushrooms are dry and the onions are soft.
- Set the filling aside to cool and prepare the filo pastry.
- Lay the filo sheets flat and cover with a damp cloth to prevent drying.
- Brush the first sheet of filo with melted butter and layer six sheets, brushing each with butter.
- Cut the layered filo into quarters and place the filling in the center of each piece.
- Gather the corners of the filo and pinch to seal the filling inside.
- Freeze the bites for 10 minutes while preheating the oven to 400°F.
- Bake for about 15 minutes or until golden brown and crispy.
