Ingredients

The filling

  • 2 tablespoons extra virgin olive oil
  • 1 large yellow onion
  • ½ teaspoon kosher salt
  • 16 ounces baby bella mushrooms
  • ½ teaspoon minced garlic
  • 2 teaspoons finely chopped fresh thyme leaves
  • ¼ teaspoon ground black pepper
  • ½ cup shredded Gruyere cheese

The pastry

  • 2 10-inch sheets frozen puff pastry
  • 1 large egg
  • 3 tablespoons whole-grain mustard
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F and prepare baking sheets.
  2. Caramelize the onions in olive oil, then set aside.
  3. Sauté the mushrooms with garlic, thyme, and pepper, then combine with the onions and cheese.
  4. Roll out the puff pastry and cut into rounds or squares.
  5. Brush the pastry with egg wash, prick with a fork, and top with mustard and the mushroom mixture.
  6. Bake until golden and crisp, then cool slightly and garnish with parsley.
