Goat Cheese Puff Pastry Bites with Mushrooms

Instructions
- Preheat the oven to 400°F.
- Melt butter in a skillet over medium heat.
- Sauté mushrooms until softened, then add shallots and cook until tender.
- Stir in garlic, spinach, parsley, salt, and pepper, cooking until spinach wilts.
- Transfer the mixture to a bowl and mix in goat cheese.
- Roll out the puff pastry and cut into 24 rectangles.
- Press pastry into a mini muffin tin and fill with the mushroom mixture.
- Fold corners of the pastry to the center and seal with water if needed.
- Bake for 15-18 minutes until golden brown.
