Goat Cheese Puff Pastry Bites with Mushrooms

Ingredients

The filling

  • 8 ounces baby bella mushrooms, small diced
  • 1 large shallot, diced finely
  • 3 cloves garlic, minced
  • 5 cups roughly chopped spinach
  • 1 tablespoon fresh chopped parsley
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8 ounces plain goat cheese

The pastry

  • 17 ounces thawed puff pastry sheets
  • 1 tablespoon unsalted butter or olive oil
  • as needed water

Instructions

  1. Preheat the oven to 400°F.
  2. Melt butter in a skillet over medium heat.
  3. Sauté mushrooms until softened, then add shallots and cook until tender.
  4. Stir in garlic, spinach, parsley, salt, and pepper, cooking until spinach wilts.
  5. Transfer the mixture to a bowl and mix in goat cheese.
  6. Roll out the puff pastry and cut into 24 rectangles.
  7. Press pastry into a mini muffin tin and fill with the mushroom mixture.
  8. Fold corners of the pastry to the center and seal with water if needed.
  9. Bake for 15-18 minutes until golden brown.
