Goat Cheese Mushroom Tartlets

Ingredients

  • 1 package mini phyllo shells (15 count)
  • 1 oz finely crumbled goat cheese
  • 1 tablespoon light butter
  • 8 oz sliced white mushrooms
  • 2 cloves garlic
  • 1 tablespoon chopped fresh parsley
  • ¼ teaspoon dried thyme
  • to taste salt and black pepper

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with aluminum foil.
  2. Place the phyllo shells on the baking sheet and sprinkle half of the goat cheese into the bottoms.
  3. Melt the butter in a skillet over medium-high heat, then add the mushrooms, salt, and pepper, cooking for about 5 minutes until softened.
  4. Stir in the garlic, parsley, and thyme, cooking for another minute until fragrant.
  5. Distribute the mushroom filling evenly among the phyllo cups and top with the remaining goat cheese.
  6. Bake in the oven for 10-12 minutes.
