Goat Cheese Mushroom Tartlets

Instructions
- Preheat the oven to 350°F and line a baking sheet with aluminum foil.
- Place the phyllo shells on the baking sheet and sprinkle half of the goat cheese into the bottoms.
- Melt the butter in a skillet over medium-high heat, then add the mushrooms, salt, and pepper, cooking for about 5 minutes until softened.
- Stir in the garlic, parsley, and thyme, cooking for another minute until fragrant.
- Distribute the mushroom filling evenly among the phyllo cups and top with the remaining goat cheese.
- Bake in the oven for 10-12 minutes.
