Ingredients

The filling

  • 1 log goat cheese
  • 1 cup shredded fontina cheese
  • ½ cup grated parmesan cheese
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh sage
  • 1 tablespoon chopped chives
  • to taste kosher salt and pepper

The mushrooms

  • 16 ounces cremini mushrooms

Instructions

  1. Preheat the oven to 375°F.
  2. In a medium bowl, mix together the goat cheese, ½ cup fontina cheese, parmesan cheese, thyme, sage, chives, and a pinch of salt and pepper.
  3. Remove the stems from the mushrooms and spoon the cheese mixture into each mushroom cap, placing them on a baking sheet.
  4. Top the stuffed mushrooms with the remaining ½ cup fontina cheese.
  5. Transfer the baking sheet to the oven and bake for 20 to 25 minutes until hot and bubbly.
  6. Serve warm.
