Ingredients

The filling

  • 8 ounces goat cheese
  • ¼ cup minced parsley
  • 1 tablespoon minced chives
  • 1 teaspoon minced garlic
  • ¼ teaspoon celtic sea salt

The mushrooms

  • 1 pound white button mushrooms

Instructions

  1. Gently wipe the mushrooms with a paper towel.
  2. Remove the stems and place the mushrooms on a parchment paper lined baking sheet.
  3. In a food processor, combine goat cheese, parsley, chives, garlic, and salt, and process until well blended.
  4. Scoop 1 teaspoon of the mixture into each mushroom.
  5. Bake at 350°F for 20-25 minutes, until the edges of the goat cheese mixture are lightly browned.
  6. Serve warm.
