Instructions
- Preheat the oven to 400°F.
- Toss the mushrooms with olive oil, balsamic vinegar, garlic, salt, and pepper, then spread them on a baking sheet and roast for 15-20 minutes.
- Cook the pasta according to package directions, reserving 1 cup of the cooking water before draining.
- Combine the cooked pasta with the roasted mushrooms, spinach, and goat cheese, adding the reserved cooking liquid to create a creamy sauce.
- Stir in the fresh basil and season with salt and pepper before serving.
