Ingredients

The pasta

  • 1 lb pasta

The vegetables

  • 8 oz Crimini mushrooms
  • 4 cups spinach
  • 1 tbsp minced garlic
  • cup freshly chopped basil

The sauce

  • 6 oz goat cheese
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • to taste salt
  • to taste black pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Toss the mushrooms with olive oil, balsamic vinegar, garlic, salt, and pepper, then spread them on a baking sheet and roast for 15-20 minutes.
  3. Cook the pasta according to package directions, reserving 1 cup of the cooking water before draining.
  4. Combine the cooked pasta with the roasted mushrooms, spinach, and goat cheese, adding the reserved cooking liquid to create a creamy sauce.
  5. Stir in the fresh basil and season with salt and pepper before serving.
