Creamy Goat Cheese Pasta with Roasted Broccoli

Instructions
- 1. Preheat the oven to 400°F.
- 2. Place broccoli florets and garlic on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- 3. Roast in the oven for 15-20 minutes until tender.
- 4. Cook the pasta according to package instructions, reserving ½ cup of pasta water before draining.
- 5. In a pan, heat 1 tablespoon of sun-dried tomato oil, add chopped roasted garlic and broccoli.
- 6. Stir in chopped sun-dried tomatoes and cooked pasta.
- 7. Crumble goat cheese over the pasta, adding reserved pasta water to achieve desired creaminess.
- 8. Season with salt and pepper, and serve warm.
