Ingredients

The pasta

  • 8 ounces whole wheat pasta

The vegetables

  • 4 cups broccoli florets
  • 3 cloves garlic
  • 1 jar sun-dried tomatoes in oil

The sauce

  • 1 tablespoon olive oil
  • 2 ounces goat cheese

Seasoning

  • to taste salt
  • to taste black pepper

Instructions

  1. 1. Preheat the oven to 400°F.
  2. 2. Place broccoli florets and garlic on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. 3. Roast in the oven for 15-20 minutes until tender.
  4. 4. Cook the pasta according to package instructions, reserving ½ cup of pasta water before draining.
  5. 5. In a pan, heat 1 tablespoon of sun-dried tomato oil, add chopped roasted garlic and broccoli.
  6. 6. Stir in chopped sun-dried tomatoes and cooked pasta.
  7. 7. Crumble goat cheese over the pasta, adding reserved pasta water to achieve desired creaminess.
  8. 8. Season with salt and pepper, and serve warm.
