Carrot Apple Ginger Soup

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1 cup diced onion
  • 2 cloves garlic
  • 2 tbsp fresh grated ginger
  • 1 large apple
  • pounds carrots
  • 4 cups vegetable broth
  • 1 pinch nutmeg
  • to taste Kosher salt
  • to taste freshly ground black pepper

Instructions

  1. Heat olive oil in a large pot over low-medium heat and sauté the onion until translucent.
  2. Add minced garlic and ginger, cooking for a couple more minutes.
  3. Stir in the chopped apple and carrots, cooking for a few additional minutes.
  4. Pour in the vegetable broth, stir, and bring to a boil, then reduce heat and simmer for 20 minutes until tender.
  5. Transfer the mixture to a blender (in batches if necessary) and blend until smooth, adding nutmeg.
  6. Season with salt and pepper to taste, and thin with more broth if desired. Serve garnished with pepper and olive oil.
