Carrot Apple Ginger Soup

Instructions
- Heat olive oil in a large pot over low-medium heat and sauté the onion until translucent.
- Add minced garlic and ginger, cooking for a couple more minutes.
- Stir in the chopped apple and carrots, cooking for a few additional minutes.
- Pour in the vegetable broth, stir, and bring to a boil, then reduce heat and simmer for 20 minutes until tender.
- Transfer the mixture to a blender (in batches if necessary) and blend until smooth, adding nutmeg.
- Season with salt and pepper to taste, and thin with more broth if desired. Serve garnished with pepper and olive oil.
