Glowing Carrot Ginger Soup

Instructions
- Preheat the oven to 425°F.
- Place chopped carrots, onion, and apple on a lined baking sheet, drizzle with oil, and season with salt and pepper. Toss to combine and roast for 30 minutes, tossing halfway through.
- Remove from the oven and let cool.
- In a high-speed blender, combine the roasted vegetables, broth, milk, garlic, ginger, and turmeric. Blend until smooth and creamy. Adjust seasoning with salt and pepper.
- If necessary, warm the soup on the stove until hot. Garnish with cilantro and walnuts before serving.
