Tapioca Pudding

Ingredients

  • cup small pearl tapioca
  • ¾ cup water
  • 2 ¼ cups cashew milk
  • 10 drops vanilla liquid stevia
  • tsp salt
  • 2 tbsp chia seed meal

Instructions

  1. Rinse the tapioca in a small mesh strainer.
  2. Soak the tapioca in a pot with water for 30 minutes.
  3. Add cashew milk, vanilla stevia, and salt to the pot.
  4. Bring the mixture to a simmer, watching carefully to prevent boiling over.
  5. Reduce heat to low and simmer uncovered for 15 minutes, stirring frequently.
  6. Remove from heat and let cool for a few minutes.
  7. Stir in chia seed meal before serving.
