Tapioca Pudding

Instructions
- Rinse the tapioca in a small mesh strainer.
- Soak the tapioca in a pot with water for 30 minutes.
- Add cashew milk, vanilla stevia, and salt to the pot.
- Bring the mixture to a simmer, watching carefully to prevent boiling over.
- Reduce heat to low and simmer uncovered for 15 minutes, stirring frequently.
- Remove from heat and let cool for a few minutes.
- Stir in chia seed meal before serving.
