Ingredients

The pudding base

  • 1 cup cashews, raw
  • 3 cups water
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • a pinch celtic sea salt

The chia seeds

  • ΒΌ cup chia seeds

Instructions

  1. Blend cashews and water in a high-speed blender until smooth.
  2. Add honey, vanilla, and salt to the blended mixture and blend again.
  3. Place chia seeds in a large mason jar and pour the cashew mixture into the jar.
  4. Shake the jar well to combine all ingredients.
  5. Refrigerate the mixture overnight.
  6. Serve chilled.
