Ingredients

The pudding

  • 1 cup homemade cashew milk, almond milk or light coconut milk
  • ½ teaspoon orange zest
  • teaspoon vanilla extract
  • 3 tablespoons chia seeds

Optional toppings

  • to taste honey or maple syrup
  • to taste sliced bananas
  • to taste fresh or defrosted berries
  • to taste shredded coconut
  • to taste toasted chopped nuts

Instructions

  1. Combine the milk, orange zest, and vanilla extract in a jar or bowl.
  2. Taste and adjust the vanilla extract if needed.
  3. Whisk in the chia seeds and let the mixture rest for about 15 minutes.
  4. Stir again to break up any clumps, cover, and refrigerate for at least 2 hours or overnight.
  5. Before serving, stir again and add desired toppings.
