Creamy Chia Pudding

Instructions
- Combine water and chia seeds in a liquid measuring cup and let sit until it forms a gel, about 20 minutes.
- If dates are not soft, soak them in hot water for up to 20 minutes, then drain.
- Pit the dates and blend them with cashews, cinnamon, vanilla, and salt, adding half or more of the chia gel until smooth.
- If the pudding is warm, chill it until cool.
- Serve individual portions with remaining chia gel swirled in and any desired toppings.
