Ingredients

Chia Seed Pudding

  • 1 ½ cups water
  • ¼ cup chia seeds
  • 6 large dates
  • cup raw cashews
  • ½ teaspoon ground cinnamon
  • ½ teaspoon pure vanilla extract
  • a pinch sea salt

Optional Toppings

  • to taste fresh fruit (berries, sliced bananas, chopped pineapple, etc.)
  • to taste cocoa powder, mini chocolate chips, or finely chopped dark chocolate
  • to taste toasted coconut

Instructions

  1. Combine water and chia seeds in a liquid measuring cup and let sit until it forms a gel, about 20 minutes.
  2. If dates are not soft, soak them in hot water for up to 20 minutes, then drain.
  3. Pit the dates and blend them with cashews, cinnamon, vanilla, and salt, adding half or more of the chia gel until smooth.
  4. If the pudding is warm, chill it until cool.
  5. Serve individual portions with remaining chia gel swirled in and any desired toppings.
