Ingredients

  • 2 cups cashew milk
  • ½ cup chia seeds
  • ¼ cup date paste
  • cup cacao powder
  • 2 tbsp carob powder
  • 2 tbsp pure maple syrup
  • 1 tbsp pure vanilla extract
  • ¼ tsp almond extract
  • ¼ tsp salt

Instructions

  1. Combine date paste, cacao powder, carob powder, maple syrup, vanilla extract, almond extract, and salt in a large mixing bowl and mix until a thick paste forms.
  2. Add about ½ cup of the milk and whisk until smooth and free of lumps.
  3. Add the remaining milk and chia seeds, mixing until well combined.
  4. Cover and refrigerate overnight or at least 8 hours, stirring occasionally.
  5. Divide the pudding into bowls and garnish with nuts and dried fruits before serving.
