Ingredients

The Cookie Dough

  • 18 oz all-purpose flour
  • 3 sticks butter
  • 3.5 oz sweetened condensed milk
  • 2 large egg yolks

The Pineapple Filling

  • 16 lbs whole pineapples
  • ½ tablespoon cloves
  • 1 cup sugar
  • 1 tablespoon lemon juice

The Egg Wash

  • 2 large egg yolks
  • ¼ teaspoon condensed milk
  • ½ teaspoon cooking oil

Instructions

  1. Prepare the pineapple by cutting off the stalk and skin, then blend the flesh into a puree.
  2. Cook the pineapple puree with cloves in a pot, stirring constantly until it thickens, then add sugar and lemon juice, and simmer until golden and sticky.
  3. Cream butter and condensed milk until fluffy, then add egg yolks and mix well. Gradually add flour to form a dough.
  4. Mix the ingredients for the egg wash in a small bowl.
  5. Divide the dough and filling into portions, rolling them into balls.
  6. Flatten the dough, place a pineapple ball in the center, and wrap it up.
  7. Roll the wrapped cookie into a ball and place on a baking sheet.
  8. Cut a criss-cross pattern on top and brush with egg wash.
  9. Bake in a preheated oven at 330°F (165°C) for 20-22 minutes until golden brown, then cool before storing.
