Pineapple Rolls (Nastar)

Ingredients

Pineapple Jam

  • 4.5 lbs pineapple
  • 21 oz sugar
  • 3 cloves cloves
  • 5 cm cinnamon stick

Pastry Dough

  • 10 oz all-purpose flour
  • 1.5 oz confectioners' sugar
  • 1.5 oz milk powder
  • 0.5 oz cornstarch
  • 7 oz unsalted butter
  • 2 egg yolks egg yolks

Egg Wash

  • 3 egg yolks egg yolks
  • ¼ teaspoon condensed milk

Instructions

  1. Blend the pineapple until smooth and transfer to a non-stick pot.
  2. Add sugar, cloves, and cinnamon to the pot and cook until a golden jam forms.
  3. Let the jam cool, preferably overnight in the fridge.
  4. Sift together flour, sugar, milk powder, and cornstarch.
  5. Cream the butter and sugar until fluffy, then add egg yolks one at a time.
  6. Gradually mix in the flour mixture until combined.
  7. Roll out 50g of dough at a time, pipe jam on top, and roll to encase it.
  8. Cut the rolls into 4 cm pieces and arrange on a baking sheet.
  9. Preheat the oven to 150°C (300°F) and prepare the egg wash.
  10. Brush the rolls with egg wash and bake until golden, about 15-20 minutes.
