Ingredients

The meat and broth

  • pounds chuck roast
  • ¼ cup dried minced onion
  • teaspoons onion powder
  • teaspoons garlic powder
  • 1 teaspoon dried parsley
  • 1 teaspoon salt
  • 12 ounces dark beer
  • 2 cups beef broth

For serving

  • 2 whole whole-wheat baguettes
  • 8 slices provolone cheese
  • to taste butter
  • to taste salt
  • to taste pepper

Instructions

  1. Place the chuck roast in the slow cooker.
  2. Mix the dried minced onion, onion powder, garlic powder, dried parsley, and salt in a bowl, then rub the mixture over the meat.
  3. Pour the dark beer and beef broth over the meat.
  4. Cook on low for 8 to 10 hours until the meat is easily shredded.
  5. Preheat the oven to 450°F.
  6. Cut the baguettes into quarters and split them open.
  7. Spread a thin layer of butter on the bread and sprinkle with garlic powder.
  8. Divide the shredded meat among half of the bread pieces and top with provolone cheese.
  9. Place all bread on a baking sheet and bake for 3 to 5 minutes until the cheese melts.
  10. Serve warm with the cooking juices as au jus.
