Ingredients

The beef and seasoning

  • 2 lb chuck roast beef
  • 2 1/4 tsp sea salt, divided
  • 2 tsp black pepper, divided
  • 2 tsp basil flakes

The Au jus

  • 1 cup yellow onion, chopped
  • 2 tbsp minced garlic
  • 1 cup red wine
  • 1/3 cup raw unfiltered honey
  • 1 tbsp Worcestershire sauce
  • 3 cups beef stock
  • 1/2 tsp garlic powder
  • 1 tsp ground thyme
  • 1 stem sage
  • 2 stems rosemary

The sandwich

  • 3 pieces French roll buns, toasted
  • 6 slices provolone cheese

Instructions

  1. 1. Set the Instant Pot to the 'Saute' setting and season the chuck roast with salt, pepper, and basil flakes.
  2. 2. Add oil to the pot and sear the roast for 2 minutes on each side, then remove it from the pot.
  3. 3. Cook the chopped onions in the pot for 5 minutes.
  4. 4. Switch the Instant Pot to 'Pressure Cook' for 45 minutes and add garlic, red wine, Worcestershire sauce, honey, beef stock, salt, pepper, garlic powder, thyme, sage, and rosemary.
  5. 5. Place the seared roast back into the pot, spooning the liquid over it, then close and lock the lid.
  6. 6. After cooking, allow a slow release for 10 minutes, then manually release remaining pressure.
  7. 7. Remove the beef and shred it with a fork or mixer.
  8. 8. Prepare the sandwich by cutting the French rolls, spreading butter, and toasting them.
  9. 9. Fill each roll with provolone cheese and shredded beef, serving with Au jus on the side.
