Instant Pot French Dip Sandwich

Instructions
- 1. Set the Instant Pot to the 'Saute' setting and season the chuck roast with salt, pepper, and basil flakes.
- 2. Add oil to the pot and sear the roast for 2 minutes on each side, then remove it from the pot.
- 3. Cook the chopped onions in the pot for 5 minutes.
- 4. Switch the Instant Pot to 'Pressure Cook' for 45 minutes and add garlic, red wine, Worcestershire sauce, honey, beef stock, salt, pepper, garlic powder, thyme, sage, and rosemary.
- 5. Place the seared roast back into the pot, spooning the liquid over it, then close and lock the lid.
- 6. After cooking, allow a slow release for 10 minutes, then manually release remaining pressure.
- 7. Remove the beef and shred it with a fork or mixer.
- 8. Prepare the sandwich by cutting the French rolls, spreading butter, and toasting them.
- 9. Fill each roll with provolone cheese and shredded beef, serving with Au jus on the side.
