Instructions
- Season the roast with salt and pepper.
- Use the Sauté function on the Instant Pot to heat oil and brown the roast on both sides, then set aside.
- Sauté the onion until translucent, scraping the bottom of the pot.
- Add bay leaf, garlic, and thyme, and sauté briefly.
- Stir in beef broth, soy sauce, and French onion soup.
- Return the roast to the pot, seal the lid, and cook on Pressure Cook for 70 minutes.
- Allow for a 15-minute natural release, then release remaining steam.
- Check the roast for tenderness; if needed, cook for an additional 10 minutes.
- Remove the meat, slice or shred it, and strain the au jus.
- Butter the rolls and toast them.
- Assemble the sandwiches with roast, onions, and cheese, broiling if desired.
- Serve with au jus for dipping.
