Ingredients

The roast

  • 1 Tbsp Cooking Oil
  • 1-2 tsp Salt
  • 1 tsp Pepper
  • 3-6 lb Bottom Round Roast (or Chuck roast) cut in half
  • 1 Onion, sliced
  • 1 Bay Leaf
  • 2 cloves Garlic, minced
  • 3 sprigs Fresh Thyme (or ¼ tsp dried)
  • 2 cups Beef Broth
  • 2 Tbsp Soy Sauce
  • 1 10.75 oz can French Onion Soup, condensed

The sandwich

  • French or Hoagie Rolls
  • Butter, for rolls
  • 3 slices Provolone Cheese (or Swiss, etc.)

Instructions

  1. Season the roast with salt and pepper.
  2. Use the Sauté function on the Instant Pot to heat oil and brown the roast on both sides, then set aside.
  3. Sauté the onion until translucent, scraping the bottom of the pot.
  4. Add bay leaf, garlic, and thyme, and sauté briefly.
  5. Stir in beef broth, soy sauce, and French onion soup.
  6. Return the roast to the pot, seal the lid, and cook on Pressure Cook for 70 minutes.
  7. Allow for a 15-minute natural release, then release remaining steam.
  8. Check the roast for tenderness; if needed, cook for an additional 10 minutes.
  9. Remove the meat, slice or shred it, and strain the au jus.
  10. Butter the rolls and toast them.
  11. Assemble the sandwiches with roast, onions, and cheese, broiling if desired.
  12. Serve with au jus for dipping.
