Ingredients

The beef and broth

  • 1 2½ - 3 pound beef roast
  • 2 tablespoons olive oil
  • 2 packages dry onion soup mix
  • 2 cups water
  • 4 cups beef broth

The rolls and cheese

  • 8-10 rolls crusty rolls or baguette thirds
  • to taste cheese of your choice (Swiss, provolone, or mozzarella)

Instructions

  1. 1. Heat olive oil in a large pot over medium-high heat.
  2. 2. Season the roast with salt and pepper, then sear it on all sides.
  3. 3. Transfer the roast to a slow cooker.
  4. 4. Sprinkle onion soup mix over the roast and add water and beef broth.
  5. 5. Cook on low for 8-10 hours or on high for 2-3 hours, then turn to low for another 4-5 hours.
  6. 6. Once cooked, shred the meat with two forks.
  7. 7. Place the shredded meat on rolls and top with cheese.
  8. 8. Broil the sandwiches in the oven for 1-2 minutes until the bread is golden and cheese is melted.
  9. 9. Serve with au jus for dipping.
