Instructions
- Preheat the oven to 400°F.
- Mix salt, pepper, oregano, thyme, and red pepper flakes; rub the mixture on the beef round.
- Place the beef in a skillet with olive oil and roast for 20-25 minutes until medium-rare.
- Let the beef rest for 10 minutes before slicing.
- For the au jus, heat olive oil in a pot, add onions and salt, and cook until softened.
- Add garlic, thyme, pepper, Worcestershire sauce, dry sherry, and beef broth; simmer for 20 minutes.
- Mix horseradish and mayonnaise in a bowl.
- Slice the beef thinly and assemble the sandwiches with horseradish mayo, beef, and provolone.
- Optionally, melt the provolone in the oven before serving.
