Ingredients

Roast Beef

  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • ½ teaspoon oregano
  • ½ teaspoon thyme
  • a pinch crushed red pepper
  • 1 pound beef round
  • 1 teaspoon olive oil

Au Jus

  • 1 teaspoon olive oil
  • 1 sweet onion peeled and roughly chopped
  • 1 clove garlic, peeled and sliced
  • ½ teaspoon dried ground thyme
  • ½ teaspoon freshly ground pepper
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dry sherry
  • 3 cups low-sodium beef broth

Horseradish Mayo

  • 2 to 3 teaspoons prepared horseradish
  • ¼ cup mayonnaise

Sandwich Assembly

  • 4 hoagie rolls
  • 4 slices provolone cheese

Instructions

  1. Preheat the oven to 400°F.
  2. Mix salt, pepper, oregano, thyme, and red pepper flakes; rub the mixture on the beef round.
  3. Place the beef in a skillet with olive oil and roast for 20-25 minutes until medium-rare.
  4. Let the beef rest for 10 minutes before slicing.
  5. For the au jus, heat olive oil in a pot, add onions and salt, and cook until softened.
  6. Add garlic, thyme, pepper, Worcestershire sauce, dry sherry, and beef broth; simmer for 20 minutes.
  7. Mix horseradish and mayonnaise in a bowl.
  8. Slice the beef thinly and assemble the sandwiches with horseradish mayo, beef, and provolone.
  9. Optionally, melt the provolone in the oven before serving.
