Ingredients

The Roast Beef

  • 3-4 pound eye of round roast
  • 1-2 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon brown sugar or sweetener
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon chili powder
  • 1 teaspoon salt
  • 2 sprig fresh rosemary (optional)
  • 3-6 sprig fresh thyme (optional)

The Au Jus Sauce

  • 2 tablespoon all-purpose flour
  • 1-2 cup beef broth
  • ½ cup red wine

The Sandwich

  • enough tablespoon butter
  • as needed slices French bread or baguette
  • as needed slices cheese

Instructions

  1. Allow the roast to come to room temperature for 2-3 hours.
  2. Preheat the oven to 450°F.
  3. Pat the roast dry, drizzle with olive oil, and season with spices.
  4. Add optional rosemary and thyme, then place the roast fat side up in a skillet.
  5. Roast for 15 minutes to form a crust, then reduce heat to 325°F and cook until desired doneness.
  6. Let the roast rest for at least 20 minutes before slicing.
  7. For the au jus, heat the drippings in a pan, add flour, and stir until incorporated.
  8. Pour in broth and wine, stirring until the sauce thickens.
  9. Spread butter on the bread and toast it in a skillet.
  10. Assemble the sandwiches with sliced beef and cheese, and serve with au jus.
