The Au Jus Sauce

Instructions
- Allow the roast to come to room temperature for 2-3 hours.
- Preheat the oven to 450°F.
- Pat the roast dry, drizzle with olive oil, and season with spices.
- Add optional rosemary and thyme, then place the roast fat side up in a skillet.
- Roast for 15 minutes to form a crust, then reduce heat to 325°F and cook until desired doneness.
- Let the roast rest for at least 20 minutes before slicing.
- For the au jus, heat the drippings in a pan, add flour, and stir until incorporated.
- Pour in broth and wine, stirring until the sauce thickens.
- Spread butter on the bread and toast it in a skillet.
- Assemble the sandwiches with sliced beef and cheese, and serve with au jus.
