Ingredients

The cornbread

  • 2 boxes Corn bread/muffin mix
  • 2 large eggs
  • cup milk
  • 3 tbsp chili powder
  • 1 cup frozen corn kernels

The topping

  • 1 cup shredded cheddar

Instructions

  1. Preheat the oven to 400 degrees.
  2. Thaw 1 cup of frozen corn kernels.
  3. Mix 3 tablespoons of chili powder into the cornbread mix in a large bowl.
  4. Combine the eggs, milk, and thawed corn into the dry mix without over-stirring.
  5. Let the mixture sit for 4-5 minutes.
  6. Pour the mixture into a greased casserole dish or muffin tin.
  7. Sprinkle 1 cup of shredded cheese on top.
  8. Bake for 20-25 minutes, checking doneness with a toothpick.
