Ingredients

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 cup coarse cornmeal
  • ¼ cup granulated sugar
  • teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon salt

Wet Ingredients

  • 1 cup buttermilk
  • 3 tablespoons unsalted butter, melted and cooled
  • 3 tablespoons canola or vegetable oil
  • 2 large eggs, slightly beaten

Add-ins

  • 1 cup frozen corn
  • 1 4 oz can green chiles
  • 1 cup shredded cheddar cheese

Instructions

  1. 1. Preheat the oven to 400°F and spray an 8x8 Pyrex baking dish with nonstick cooking spray.
  2. 2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
  3. 3. In another bowl, whisk the buttermilk, melted butter, oil, and eggs together.
  4. 4. Pour the wet ingredients into the dry ingredients and stir until just combined; the batter will be lumpy.
  5. 5. Fold in the corn, green chiles, and cheddar cheese.
  6. 6. Pour the batter into the prepared baking dish.
  7. 7. Bake for 32-34 minutes until golden brown and a toothpick inserted comes out clean.
  8. 8. Let the cornbread cool in the pan for 15 minutes before cutting into squares and serving.
