Instructions
- 1. Preheat the oven to 400°F and spray an 8x8 Pyrex baking dish with nonstick cooking spray.
- 2. In a large bowl, whisk together the flour, cornmeal, sugar, baking powder, baking soda, and salt.
- 3. In another bowl, whisk the buttermilk, melted butter, oil, and eggs together.
- 4. Pour the wet ingredients into the dry ingredients and stir until just combined; the batter will be lumpy.
- 5. Fold in the corn, green chiles, and cheddar cheese.
- 6. Pour the batter into the prepared baking dish.
- 7. Bake for 32-34 minutes until golden brown and a toothpick inserted comes out clean.
- 8. Let the cornbread cool in the pan for 15 minutes before cutting into squares and serving.
