Ingredients

The batter

  • 1 cup butter
  • 1 cup sugar
  • 4 large eggs
  • 1 can cream style corn
  • 1 can chopped green chiles
  • 1 cup flour
  • 4 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup cornmeal

The cheese

  • ½ cup grated Monterey Jack cheese
  • ½ cup grated cheddar cheese

Instructions

  1. Preheat the oven to 350°F.
  2. Cream together the butter and sugar until fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the green chiles and cream style corn.
  5. In a separate bowl, combine the flour, baking powder, and salt.
  6. Toss the grated cheeses with a spoonful of the flour mixture to prevent clumping.
  7. Add the remaining flour mixture and cornmeal to the wet ingredients and stir to combine.
  8. Pour the mixture into a greased 9x13 inch baking pan.
  9. Reduce the oven temperature to 300°F and bake for 50-60 minutes, or until a knife inserted in the center comes out clean.
