Roasted Bell Pepper Tostadas

Ingredients

  • 2–3 pieces bell peppers
  • 1 piece onion
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked sweet paprika
  • 1 can black beans
  • to taste cloves garlic
  • 3-4 pieces tostada shells
  • to taste pieces scallions
  • to taste amount sour cream
  • to taste amount salsa

Instructions

  1. Chop the bell peppers and onion, coat with oil and spices, and roast at 400°F for 20-30 minutes.
  2. In a food processor, puree the black beans with garlic and additional spices if desired.
  3. Spread the bean puree on tostada shells and top with roasted peppers, scallions, sour cream, and salsa.
