Black Bean Sweet Potato Tostadas

Ingredients

  • 2 large sweet potatoes
  • 4 pieces corn tortillas
  • 1 can black beans
  • ½ cup chopped cilantro
  • ½ piece red onion
  • 1 piece avocado
  • 1 piece lime
  • to taste salt
  • to taste pepper
  • drizzle of olive oil
  • optional shredded cheese
  • optional salsa or hot sauce

Instructions

  1. Preheat the oven to 400°F.
  2. Prepare the sweet potato cubes on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Roast the sweet potatoes for 40-45 minutes until soft, stirring occasionally.
  4. In a non-stick skillet, heat the corn tortillas over medium-high heat until they bubble, then flip and cook until golden brown.
  5. Place the tortillas on a baking sheet, spray lightly with cooking spray, and broil for about 2 minutes on each side until crispy.
  6. Heat the black beans either on the stove or in the microwave.
  7. Assemble the tostadas by topping the tortillas with black beans, roasted sweet potatoes, red onion, cilantro, and lime juice.
  8. Add any additional toppings as desired and serve warm.
