Black Bean Sweet Potato Tostadas

Instructions
- Preheat the oven to 400°F.
- Prepare the sweet potato cubes on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast the sweet potatoes for 40-45 minutes until soft, stirring occasionally.
- In a non-stick skillet, heat the corn tortillas over medium-high heat until they bubble, then flip and cook until golden brown.
- Place the tortillas on a baking sheet, spray lightly with cooking spray, and broil for about 2 minutes on each side until crispy.
- Heat the black beans either on the stove or in the microwave.
- Assemble the tostadas by topping the tortillas with black beans, roasted sweet potatoes, red onion, cilantro, and lime juice.
- Add any additional toppings as desired and serve warm.
