Ingredients

The base

  • 2 cups Refried Black Beans
  • 12 pieces Corn Tortillas
  • 2 large Sweet Potatoes

The seasoning

  • 1 tsp Chili Powder
  • tsp Cayenne Pepper
  • 1 tsp Salt

The toppings

  • to taste Salsa
  • to taste Queso Fresco or Cotija Cheese
  • to taste Avocado
  • to taste Shredded Iceberg Lettuce or Cabbage

Instructions

  1. Preheat the oven to 400 degrees.
  2. Cut sweet potatoes into ½ inch cubes, place on a sheet pan, spray with olive oil, and season with salt, chili powder, and cayenne pepper.
  3. Roast sweet potatoes for 20-25 minutes, tossing halfway through.
  4. Prepare toppings by shredding lettuce or cabbage, cutting avocado, and heating refried beans over low heat.
  5. Toast tortillas in an air fryer or oven until golden and crispy.
  6. Assemble tostadas by spreading refried beans, adding roasted sweet potatoes, lettuce, salsa, avocado, and cheese.
