Instructions
- Preheat the oven to 400°F and prepare baking sheets.
- Toss sweet potatoes with olive oil, chili powder, and salt, then roast until tender.
- In a saucepan, heat olive oil, add garlic and cumin, then add black beans, water, and salt, simmering and mashing until thick.
- Brush tortillas with olive oil and bake until golden and crispy.
- Combine salad ingredients in a bowl and toss with olive oil and lime juice.
- Assemble tostadas by spreading black beans on tortillas, placing them on salad, and topping with sweet potatoes, avocado, red onion, and cilantro.
