Ingredients

Roasted Sweet Potatoes

  • 1 ¾ pounds sweet potatoes
  • 1 tablespoon SimplyNature Organic Extra Virgin Olive Oil
  • ½ teaspoon chili powder
  • to taste none Salt

Refried Black Beans

  • 1 tablespoon SimplyNature Organic Extra Virgin Olive Oil
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 2 cans (15 ounces each) SimplyNature Organic Black Beans
  • ½ cup water
  • ½ teaspoon sea salt

Crispy Baked Tortillas

  • 8 pieces corn tortillas
  • 1 tablespoon SimplyNature Organic Extra Virgin Olive Oil

Crisp Lime Salad and Garnishes

  • 18 ounces romaine lettuce
  • cup (about 4 ounces) Happy Farms Preferred Feta Cheese Crumbles
  • ¾ cup finely chopped red onion
  • ¼ cup SimplyNature Organic Extra Virgin Olive Oil
  • 2 tablespoons fresh lime juice
  • to taste none Sea salt
  • 2 ripe avocados
  • small handful none fresh cilantro leaves
  • to serve none Hot sauce or salsa

Instructions

  1. Preheat the oven to 400°F and prepare baking sheets.
  2. Toss sweet potatoes with olive oil, chili powder, and salt, then roast until tender.
  3. In a saucepan, heat olive oil, add garlic and cumin, then add black beans, water, and salt, simmering and mashing until thick.
  4. Brush tortillas with olive oil and bake until golden and crispy.
  5. Combine salad ingredients in a bowl and toss with olive oil and lime juice.
  6. Assemble tostadas by spreading black beans on tortillas, placing them on salad, and topping with sweet potatoes, avocado, red onion, and cilantro.
