Ingredients

The nachos

  • 4 large bell peppers
  • 1 lb ground turkey or lean ground beef
  • 3 tbsp taco seasoning
  • 1 15.5 oz can black beans
  • 1 cup Mexican-blend cheese
  • 1 avocado diced avocado
  • 1 cup cherry tomatoes
  • ΒΌ cup sweet onion
  • 3 tbsp cilantro
  • 2 tsp lime juice
  • to taste salt
  • to taste black pepper

Optional toppings

  • to taste salsa
  • to taste sour cream or Greek yogurt

Instructions

  1. Preheat the oven to 425 degrees.
  2. Cook the ground turkey with taco seasoning in a skillet until browned.
  3. Arrange the sliced bell peppers on a baking sheet and roast for 7-9 minutes.
  4. While the peppers roast, prepare the pico de gallo by mixing tomatoes, onion, cilantro, lime juice, salt, and pepper.
  5. Remove the peppers from the oven and top them with the cooked meat, black beans, and cheese.
  6. Return to the oven for 3-4 minutes until the cheese is melted.
  7. Top with pico de gallo and any additional toppings before serving.
