Instructions
- Preheat the oven to 425 degrees.
- Cook the ground turkey with taco seasoning in a skillet until browned.
- Arrange the sliced bell peppers on a baking sheet and roast for 7-9 minutes.
- While the peppers roast, prepare the pico de gallo by mixing tomatoes, onion, cilantro, lime juice, salt, and pepper.
- Remove the peppers from the oven and top them with the cooked meat, black beans, and cheese.
- Return to the oven for 3-4 minutes until the cheese is melted.
- Top with pico de gallo and any additional toppings before serving.
