Loaded Ground Turkey Nachos

Ingredients

The nachos

  • 1 lb ground turkey
  • 3 tbsp taco seasoning
  • 1 can black beans, drained and rinsed
  • 6 oz tortilla chips
  • 1 ¼ cups Mexican shredded cheese
  • ½ each avocado, diced
  • 2-3 tbsp cilantro, diced
  • ½ cup sour cream
  • 1 each jalapeño, sliced thin

Pico de gallo

  • 1 cup cherry tomatoes, diced
  • ¼ cup red onion, diced
  • 2-3 tbsp cilantro, chopped
  • 2 tsp lime juice
  • to taste salt
  • to taste pepper

Instructions

  1. Preheat the oven to 400°F.
  2. In a skillet, heat oil and add ground turkey with taco seasoning, cooking until browned.
  3. Prepare pico de gallo by mixing tomatoes, onion, cilantro, lime juice, salt, and pepper.
  4. Line a sheet pan with parchment paper, layer tortilla chips, then top with turkey, black beans, and cheese.
  5. Bake for 10-12 minutes until cheese is melted, checking to prevent burning.
  6. Remove from oven and top with pico de gallo, jalapeños, avocado, and sour cream. Serve with lime wedges.
