Instructions
- Make the creamy avocado sauce by blending avocado, sour cream, lemon juice, cilantro, salt, and water until smooth, then refrigerate.
- Cook the turkey and onions in avocado oil, adding seasoning and cooking until browned.
- Add black beans, green chiles, remaining seasoning, and water to the turkey mixture, simmering for 15 minutes.
- Preheat the oven to 425°F and prepare a baking sheet with cooking spray.
- Assemble tacos by placing tortillas on the sheet, adding cheese, and spooning the turkey mixture on one half.
- Bake for 1-2 minutes to melt the cheese, then fold and brush with oil before baking for an additional 10-12 minutes until crispy.
- Serve with the avocado sauce.
