Ingredients

The Filling

  • 2 tsp Avocado Oil (or Olive Oil)
  • 8 oz Lean Ground Turkey
  • ½ tsp Cumin
  • ½ tsp Mexican Oregano (or Italian Oregano)
  • ½ tsp Garlic Powder
  • ½ tsp Kosher Salt
  • ¼ tsp Smoked Paprika
  • ¼ tsp Chili Powder
  • tsp Cayenne Pepper (optional)
  • cup chopped Yellow Onion
  • ¾ cup Black Beans (drained, not rinsed)
  • 4 oz Green Chiles
  • 2 tbsp finely chopped Cilantro (optional)

The Tacos

  • 6 count Fajita Size (6 inch) Flour Tortillas
  • cups shredded Monterey Jack Cheese
  • Cooking Spray or Avocado Oil for brushing the tortillas

The Avocado Sauce

  • ½ medium Avocado
  • ¼ cup Sour Cream (or full-fat Greek yogurt)
  • 1 tbsp fresh Lemon Juice (or fresh lime juice)
  • ¼ cup fresh Cilantro Leaves
  • ½ tsp Kosher Salt
  • 2 tbsp Water (plus more as needed)

Instructions

  1. Make the creamy avocado sauce by blending avocado, sour cream, lemon juice, cilantro, salt, and water until smooth, then refrigerate.
  2. Cook the turkey and onions in avocado oil, adding seasoning and cooking until browned.
  3. Add black beans, green chiles, remaining seasoning, and water to the turkey mixture, simmering for 15 minutes.
  4. Preheat the oven to 425°F and prepare a baking sheet with cooking spray.
  5. Assemble tacos by placing tortillas on the sheet, adding cheese, and spooning the turkey mixture on one half.
  6. Bake for 1-2 minutes to melt the cheese, then fold and brush with oil before baking for an additional 10-12 minutes until crispy.
  7. Serve with the avocado sauce.
