Ingredients

The tacos

  • 12 pieces soft corn tortillas
  • 1 tbsp extra virgin olive oil
  • 1 lb lean ground turkey
  • to taste salt
  • to taste pepper
  • 2 tsp garlic powder
  • 2 tbsp taco seasoning
  • cup water
  • 1 15 oz can black beans (drained and rinsed)
  • ¼ cup diced onion
  • ½ cup diced bell pepper

Optional toppings

  • to taste lettuce
  • to taste tomato
  • to taste jalapeño
  • to taste avocado
  • to taste cheese
  • to taste Greek yogurt

Instructions

  1. Preheat the oven to 350°F and wrap tortillas in foil to warm for 10-15 minutes.
  2. Heat olive oil in a medium sauté pan over medium-high heat.
  3. Add ground turkey to the pan, season with salt, pepper, and garlic powder, and cook until opaque.
  4. Stir in taco seasoning and water, mixing until turkey is well coated.
  5. Add black beans, onions, and bell pepper, cooking for an additional 5 minutes until heated through.
  6. Fill tortillas with the turkey mixture and top with your favorite toppings.
