Leftover Turkey Nachos

Ingredients

The nachos

  • 15-17 large chips tortilla chips
  • 2 cups cooked turkey
  • 15 oz canned diced tomatoes and chilies
  • 15 oz canned black beans
  • ½ cup chopped onions
  • ½ cup sliced black olives
  • cups shredded cheese
  • ¼ cup shredded pepper jack cheese

Homemade Taco Seasoning

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon garlic powder
  • to taste salt and pepper
  • ½ teaspoon paprika
  • 1 teaspoon cayenne pepper (optional)

Optional toppings

  • to taste salsa
  • to taste Greek yogurt or sour cream
  • to taste guacamole
  • to taste jalapenos
  • to taste cilantro

Instructions

  1. Preheat the oven to Low Broil.
  2. Spread enough tortilla chips to cover the bottom of a sheet pan.
  3. In a large bowl, combine cooked turkey, black beans, diced tomatoes and chilies, onions, sliced olives, and taco seasoning.
  4. Mix well and spread the mixture over the tortilla chips.
  5. Sprinkle the cheese evenly over the top.
  6. Broil for 4-6 minutes or until the cheese has melted.
