Baked Nachos

taco seasoning

The nachos and toppings

green pepper, diced

red onion, diced

beans (black or pinto), drained and rinsed

sweet corn

Mexican shredded cheese
Optional toppings

Greek yogurt

Instructions
- Heat olive oil in a large skillet over medium/high heat.
- Add ground meat and sauté until fully cooked.
- Stir in taco seasoning and water, and let simmer for 5 minutes.
- Preheat oven to 400ºF and line a baking sheet with tin foil.
- Layer half of the tortilla chips on the baking sheet and top with half of the meat mixture and other toppings.
- Add another layer of chips and the remaining toppings.
- Bake in the oven for 10 minutes or until cheese melts, then broil for 1-2 minutes.
- Serve with optional toppings.
