Baked Nachos

Ingredients

The meat mixture

  • 1 tablespoon olive oil
  • 1 lb. ground beef, chicken, turkey, or plant-based ground
  • 1 packet taco seasoning
  • 3 tablespoons water

The nachos and toppings

  • 6 servings tortilla chips
  • 1 large green pepper, diced
  • ½ medium red onion, diced
  • 1 can beans (black or pinto), drained and rinsed
  • ½ cup sweet corn
  • ½ cup Mexican shredded cheese

Optional toppings

  • to taste Greek yogurt
  • to taste lime juice
  • to taste fresh cilantro
  • to taste sliced avocado

Instructions

  1. Heat olive oil in a large skillet over medium/high heat.
  2. Add ground meat and sauté until fully cooked.
  3. Stir in taco seasoning and water, and let simmer for 5 minutes.
  4. Preheat oven to 400ºF and line a baking sheet with tin foil.
  5. Layer half of the tortilla chips on the baking sheet and top with half of the meat mixture and other toppings.
  6. Add another layer of chips and the remaining toppings.
  7. Bake in the oven for 10 minutes or until cheese melts, then broil for 1-2 minutes.
  8. Serve with optional toppings.
