Ingredients

The nachos

  • 1 bag (9 oz) tortilla chips
  • 1 Tbsp olive oil
  • ½ cup tomato sauce
  • 1 lb. lean ground beef (85 - 90%)
  • 1 can (4 oz) diced mild green chilis
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 pkg. (1.25 oz) low-sodium taco seasoning

The toppings

  • 2 cups shredded cheddar cheese or monterey jack cheese
  • 1 large avocado, diced
  • cup sour cream or crema Mexicana
  • cups pico de gallo

Instructions

  1. Preheat the oven to 375 degrees.
  2. Spread tortilla chips in an even layer on a rimmed baking sheet.
  3. Heat olive oil in a skillet over medium-high heat and brown the beef for about 6 minutes, then drain the fat.
  4. Stir in tomato sauce, black beans, green chiles, and taco seasoning.
  5. Spoon the beef mixture evenly over the chips and sprinkle both cheeses on top.
  6. Bake in the oven until the cheese is melted, about 5 to 8 minutes.
  7. Top with pico de gallo and diced avocado, then add sour cream or crema before serving.
