Loaded Chicken Nachos

Ingredients

The Meat

  • 1 tablespoon olive oil
  • 1 lb. ground chicken
  • 1 packet taco seasoning
  • 3 tablespoons water

The Nachos + Toppings

  • 6 servings tortilla chips
  • 1 large red pepper, diced
  • ½ medium red onion, diced
  • 1 15 oz. can beans, black or pinto, drained and rinsed
  • ½ cup sweet corn
  • ½ cup Mexican shredded cheese

Optional Toppings

  • to taste Greek yogurt
  • to taste lime juice
  • to taste fresh cilantro
  • to taste sliced avocado

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add ground chicken and cook until fully cooked.
  3. Stir in taco seasoning and water, and let simmer for 5 minutes.
  4. Preheat oven to 400ºF and line a baking sheet with tin foil.
  5. Spread half of the tortilla chips on the baking sheet.
  6. Layer half of the cooked chicken, veggies, beans, and cheese on top of the chips.
  7. Add another layer of chips and repeat the topping process.
  8. Bake for 10 minutes until cheese melts, then broil for 1-2 minutes.
  9. Serve with optional toppings.
