Loaded Chicken Nachos

beans, black or pinto, drained and rinsed

Instructions
- Heat olive oil in a skillet over medium-high heat.
- Add ground chicken and cook until fully cooked.
- Stir in taco seasoning and water, and let simmer for 5 minutes.
- Preheat oven to 400ºF and line a baking sheet with tin foil.
- Spread half of the tortilla chips on the baking sheet.
- Layer half of the cooked chicken, veggies, beans, and cheese on top of the chips.
- Add another layer of chips and repeat the topping process.
- Bake for 10 minutes until cheese melts, then broil for 1-2 minutes.
- Serve with optional toppings.
