Instructions
- Preheat the oven to 350 degrees.
- Brush the chicken with olive oil and season with salt and pepper, then grill it for about 5 minutes per side until cooked through.
- Set the grilled chicken aside to cool, then shred it with two forks.
- Divide the tortilla chips between two oven-safe dishes and top with the shredded chicken, refried beans, and cheese.
- Cover the dishes with foil and bake for 15 minutes, then remove the foil and bake for another 2 minutes.
- Prepare the remaining toppings while the nachos are baking.
- Once out of the oven, top the nachos with grated carrots, olives, salsa, and lettuce, then serve warm.
