Ingredients

The nachos

  • 1 tbs olive oil
  • 1 lb chicken breast
  • 16 oz tortilla chips
  • 15 oz refried beans
  • cups grated cheese

The toppings

  • 2 carrots grated
  • 4 oz black olives
  • 1 cup salsa
  • 1 cup chopped lettuce

Instructions

  1. Preheat the oven to 350 degrees.
  2. Brush the chicken with olive oil and season with salt and pepper, then grill it for about 5 minutes per side until cooked through.
  3. Set the grilled chicken aside to cool, then shred it with two forks.
  4. Divide the tortilla chips between two oven-safe dishes and top with the shredded chicken, refried beans, and cheese.
  5. Cover the dishes with foil and bake for 15 minutes, then remove the foil and bake for another 2 minutes.
  6. Prepare the remaining toppings while the nachos are baking.
  7. Once out of the oven, top the nachos with grated carrots, olives, salsa, and lettuce, then serve warm.
