Ingredients

BBQ Shredded Chicken

  • 1 cup barbecue sauce
  • ¼ cup apple cider vinegar
  • ¼ cup water
  • 1½ to 2 pounds boneless skinless chicken breasts
  • to taste salt and pepper
  • 3 tablespoons butter

Nachos

  • 1 bag tortilla chips (13 to 16 ounces)
  • 3 cups shredded cheese
  • 1 to 2 roma tomatoes (chopped)
  • ½ medium red onion (diced)
  • 1 to 2 jalapeños (sliced, optional)
  • to taste barbecue sauce (for topping)
  • to taste ranch dressing (for topping)
  • ½ cup cilantro (chopped, loosely packed)

Instructions

  1. Preheat the oven to 425°F.
  2. Prepare the BBQ shredded chicken by whisking together barbecue sauce, apple cider vinegar, and water.
  3. Season the chicken breasts with salt and pepper, then cook in melted butter until lightly browned.
  4. Add the barbecue sauce mixture to the chicken, cover, and simmer until cooked through.
  5. Shred the chicken and return it to the sauce to coat.
  6. Assemble the nachos by layering half of the chips, followed by half of the toppings and cheese, then repeat with the remaining chips and toppings.
  7. Bake for 6 to 8 minutes until the cheese is melted.
  8. Top with additional barbecue sauce, ranch dressing, and cilantro before serving.
