Ingredients

The base

  • 1 teaspoon olive oil
  • 1 cup chopped onion
  • ½ cup chopped red pepper
  • ½ cup chopped green pepper
  • 2 cloves garlic, minced
  • 1 cup broth (turkey, chicken, or vegetable)
  • 4 cups cooked turkey meat
  • 1 16 oz can kidney beans, drained
  • 1 16 oz can black beans, drained
  • 1 16 oz can petite diced tomatoes
  • 1 8 oz can tomato sauce

The spices

  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon oregano
  • to taste salt and pepper
  • 1 teaspoon red cayenne pepper (optional, 1 tablespoon for spicy)

Instructions

  1. Heat olive oil in a Dutch oven or soup pot over medium-high heat.
  2. Sauté onions and peppers until translucent and fragrant.
  3. Add garlic and stir.
  4. Mix in broth, turkey, beans, diced tomatoes, tomato sauce, and spices.
  5. Lower heat to medium-low, cover, and simmer for 20-25 minutes.
