Bell Pepper Nachos

Ingredients

The base

  • 3 cups sliced red bell pepper
  • 1 pound ground beef (or bison, chicken, or turkey)
  • 1 tablespoon avocado oil (or refined coconut oil)
  • 2 tablespoons taco seasoning
  • 1 teaspoon salt
  • 1 teaspoon chili powder

Quick Guacamole

  • 3 avocados
  • ¼ cup pico de gallo (or fresh salsa)
  • 1 juice lime
  • 1 teaspoon salt
  • 1 tablespoon cilantro (optional)

Chipotle Sauce

  • ¼ cup mayonnaise
  • 1 teaspoon chipotle pepper powder
  • ½ juice lime
  • a couple of dashes hot sauce

Toppings

  • ½ cup pico de gallo
  • cilantro (chopped)
  • ¼ cup red onion (chopped)
  • black olives (sliced)

Instructions

  1. Prepare the bell peppers by cutting them in half, deseeding, and slicing into ¾" pieces.
  2. Heat oil in a skillet over medium heat, then add ground meat and seasonings. Brown and crumble the meat.
  3. In a bowl, mash together avocados, pico de gallo, lime juice, salt, and cilantro.
  4. In another bowl, whisk together mayonnaise, chipotle powder, lime juice, and hot sauce.
  5. Arrange bell pepper slices with insides facing up, top with ground meat and guacamole, drizzle with chipotle sauce, and add remaining garnishes.
